I'm wondering if there is a way to display an auxiliary console (or something similar) when running vrep headless -
Since a headless vrep has to be launched via the terminal anyways of course it's easy to just print to this terminal,
but in some cases a dedicated console would be a bit more elegant, e.g. when several instances of vrep are started from the same terminal (and all messages from all instances would be printed there).

this is currently not possible. What you can do however is have each headless instance print some messages to specific files. and display them in some different fashion.
