I am working with a strain gauge sgd- 1.5/120-ly11 to measure deformation I wanted to know if there is a way to simulate a similar sensor in v-rep.

V-REP does rigid body simulation. Since a strain gauge is a deformable body, in principle you cannot simulate that.

However, you can use a joint to act as a spring (see this post, this other post, and the example in models/examples/spring-damper) and measure the displacement caused by a force/torque.

Also a force sensor might be suitable, depending on what you want to achieve.
