Suggestion for model to simulate cutting vegetables

I'm trying to simulate a robot for seniors with Parkinsons to help them with simple tasks such as cutting vegetables. What sort of robot models in coppeliasim could lend themselves to these simple for normal human task? Does this task absolutely need a humanoid two-armed robot or can this task possibly be done by other robots? For example, is there any model with 2 arms with grippers? ABB YuMi or 2 uarm with gripper models??
